I am addicted to nachos now. So I started digging around the internet looking for other nachophiles for advice, here is what I surmised:
1. never use pre-grated cheese, ever.
2. build the nachos in layers, first tortilla chips, sprinkle on cheese, throw in a hot oven for two minutes, repeat.
Things I haven’t fully worked out yet: how to transfer the nachos properly from a cookie sheet to a plate. I’ve had sporadic layers of perfect cheese but also layers of crap. I really want to get that thick cheese-chip single unit
today I am going to attempt another nacho creation with my leftover pulled pork from last week.
